Not sure what State you are in, but in WA if you already have a car license, you don't have P plates once you get your < 250cc motor bike license. It could be the same in other States, so maybe check into that.
If you don't have a valid Australian motor bike license with an IDP, and you get a local Indonesian license, any insurance company would find it hard to dispute that you didn't hold a "license valid in the relevant country". It is a license, issued by Indonesian authorities, for the purpose of licensing you to drive a motor bike on the road. Doesn't get much more valid than that.
