North or south Bali?

I'm looking for the best place to take a 1 week holiday in Bali with my friend. Maybe one of the northern areas? Can you suggest somewhere please.

We like body surfing, hiking, getting lost, getting found, eating well and sleeping safe.
But we definitely don't want to be surrounded by other tourists.
