Surfing mainly in South but can be as far North as Medewi (NorthWest Bali). No surfing on North Coast.
Highest concentration of tourists in the South, entire area from Denpasar and South.
For hiking, South is flat, dry, developed and boring so go more North, from Ubud all the way up to North Coast. I'm sure you can do some internet searching to get hiking info.
Eat well everywhere, unless you are thinking that eating well is 4star European cuisine.
Overall, Bali is very safe.
Consider a side trip to Nusa Lembongan, small island 30-60minute boat ride from Sanur. Has surf, and excellent snorkel/scuba. is very quiet and relaxing. Some tourists, but the "better" sort, ha ha.
