My son (16yrs) was diagnosed, in May 2012, with Gluten Intolerance so we did Bali in July Gluten Free BUT there's a HUGE difference between that and Coeliac.
Coeliacs can get really sick from just a few breadcrumbs which are gluten based.
We contacted the Coeliac Society and they gave us a card which was in English and Indonesian and while we stayed at the Aston in Tanjung Benoa they gave us a separate card to give to restaurants while we stayed with them.

Different places made different efforts for us.
I contacted the three hotels we were staying at in advance
Those town hours in Kuta didn't even acknowledge our issues although there were repeated emails. We had to pay for a special breakfast even though we'd already paid and he couldn't eat it.
The Aston in Tanjung Benoa were FANTASTIC the pastry chef requested to meet with us in our arrival and made special things for our son at no extra cost so the breakfast for instance there that was included he had GF pancakes made especially for him each day! We decided to eat at their Italian restaurant so they bought in special GF flour and made pasta for him etc.
We then stayed at a small resort in Pemuteran again emailed in advance they cooked him a special breakfast at his request and charged us nothing extra.
But what we tended to do was to order the sauce separate and stick to rice, meat and veg as you can't really go wrong!
But again that GF not Coeliac.............
