only eat local. I didn't even know there was places with GF menus but I guess with the demand from tourists it's great to see. If you eat in a local establishment you will find that there is no wheat in the kitchen at all. But, some Celiacs are allergic to rice and corn gluten and that is in ALL local kitchens so don't assume they will be okay until you have talked to your friends.
The only time I ask is if it's a new dish in a new place with a coating (sauces not a problem in the local places, the sauces with gluten's are imported).
If you are in the more fancy establishments, it is important the Chef understands the dangers and whether it is all gluten's, so ask to speak to the person cooking. Indonesians are crowd pleases they will smile and say yes to everything. If you are in a fancy place I presume they will speak English, if you forget to have a card with it written down and they don't understand, it's pretty easy as "Allergic" is "Alergik and once they hear that they will find a translator for you.
