It depends what you like to do and the ages of your kids. Do a search for "Sentosa Island" it's very nice there but it is away from the shops. At sentosa you will see the merlion - there is a night time laser show, an aquarium. There is also a dolphin show (not quite seaworld by a long shot but you do get to see the dolphins do stuff) but I think it will be nice.
Regarding shopping i would recommend Chinatown, Little India (go to the Mustafa centre - its open 24 hours) Bugis Junction. Also Orchard Road.
It all depends what's your style and what you like to do and see.
Go to Chymes for dinner one evening, or the east coast seafood centre. i love the restaurants in little india but not sure if your kids like currys.
If you seem unsure of the food - buy the haianese chicken rice.
