Have no idea whether you can order cheques online but I would think not as you need to show ID when you "buy" the cheques.
With travellers cheques you normally require ID (passport) to be able to cash the cheque. Cash you don't need any ID at all and in some cases you get a slightly better rate for cash.
We never take cheques and only take cash. As with cheques you leave your cash in the safe in your room or the safety deposit boxes at the reception of the hotel.
I guess .. its everyone's choice at the end of the day.
