Things to do in Ubud?

We will be in Bali in April and will be staying in Ubud at the Ubud Village Hotel for the first 4 days and then moving to the Risata in Tuban for 7 days. We have stayed in Tuban before but never Ubud.

Any suggestions of things that we MUST do while there. One thing that we are planing is a trip to the Zoo we were there in Sept 07 and had a great but rushed visit this time we plan to stay longer and have lunch. We have only ever stopped in Ubud to see the Monkeys and a few shops before.
