I haven't been to Bali as yet and hence cannot comment on the Indian food available there. Further, its very unlikely that I will be trying out the Indian food in Bali considering that I am staying for only 8 nights ie 16 meals...8 lunches and dinners each...I already have plenty of restaurants lined up and Indian doesn't figure. I can pig out on absolutely superb Indian food in Bombay every day sooo why I should I bother ??? ;-) Yes, Clovis, there are literally hundreds of restaurants serving good to very good to absolutely fabulous food in Bombay alone, let alone the other parts of the country. The price even in the more expensive restaurants rarely exceeds 50/60 Aussie dollars for two people, drinks extra. If you liked the "railway trays", I am sure you would have relished the food in the better restaurants ;-)
I have a funny feeling though that the kinda food you Aussies would like would be pretty bland for my taste ;-) If my wife is game(I very much doubt it), I would like to try out the Gateway of India just to see what you Aussies rave about ;-) But, from our experience in London, I have learned to be very wary of "INDIAN" restaurants overseas. They are more often than not Bangladeshi and cater mainly to the Westerners...meaning tastewise ;-)
