We have stayed at the Kuta lagoon when our 1st was 8 mths, 20 mths, 2.5 yrs and 3 yrs in a pool access room. We just let him guide our day, if he was tired he slept, I would watch movies and hubby would swim. He would eat most things we did ( first trip I took so much food which was wasted) the hotel was always willing to cook him up something if we asked. Being in deluxe you are upstairs there is a ramp at the end if you need to push a stroller, there is no lift. The hotel does not (or did not) a cot so either co sleep or take your own. They also do not have a babysitting service like they state in the hotel book.
We are back to Kuta lagoon in November in a pool access with mr almost 6 (6th trip) and his sister who will be 13 months. I can't tell you much about the airline as our son was always easily entertained by toys , I'm dreading the flight with our daughter as she is very go, go, go.
