What do I do if pulled over by Police?

For the first time, I'll be hiring a car in June - & I'm very excited. I'm only hiring it for 5 days - as a trial run.
My questions is: What do I do when pulled over by the Police? What do I say? Of course, I've already got my International D/L, travel insurance & I'll be carrying my Aussie D/L with me whilst driving.
Any forewarning would be greatly appreciated by people that have been pulled over.
