It's all just going to depend on how many other international flights arrive at around the same time, or just before you.
Having US dollars may speed you up by, at most, 30 seconds, in the process of buying your visa. If you pay in Aussie dollars, they have little piles of change ready to hand to you, so the difference in time is really negligible.
You can organise an express service for a cost. Usually another $20-30 on top of your visa cost, per person.
The last few times I've been the queues have been minimal, so nowhere near 2 hours waiting. I think it took me around half an hour from getting off the plane to being outside the airport when I was there in March, and most of that was spent at the luggage carousel.
