Ubud is my favourite place in the world also!!! Just got back couple of weeks ago :( I would add to your list :
CINTA BAR - On Monkey forest Road great happy hour mojitos and excellent food.
CAFE WAYAN - also on Monkey Forest Road beautiful garden setting and has lovely authentic indonesian food.
KAFE - on Hanoman Street - yummy organic healthy food.
Check out Tegallalang - a 30 minute drive out of Ubud for the impressive rice terraces. They have little cafes so you can stop for a drink overlooking the rice terraces. Magnificent view!
THREE MONKEYS CAFE - Monkey Forest Road, love their coffee and breakfast here!
