Doesnt answer the insurance question but we have done the same connection with same airlines and no problems at all. Actually J* arrived early into Darwin both times. We filled in time checking in, having a snack, reading a little, shopping for duty free. 3 hrs should be ok as Darwin only a small airport so no distance to cover. Hope that helps.
