I know of many that have done it and many that have not, depends on whether the men in the family want to inspect you which can happen.

I feel you need to talk to her, marriage is built on communication so you better start now. Ask her if she believes they will inspect etc, if she thinks not, ask if she is willing to pretend you have had it done (you are starting on a small white lie anyway as I presume you are only converting for marriage and didn't read up on Islam and decide you just had to convert). Ask her if she is willing to be married in another country (she may feel your reasons are only to live here and not to be with her), you don't have to go to another country but just talk about these things so that you both have a clear head before moving forward. People question mixed marriages all the time as they don't understand what happens behind close doors, but behind those doors you need to understand it for yourself. Ask WHY do you both want this union and what are you both willing to sacrifice for it (including foreskin). Marriage is about compromise, get used to that, a happy wife is a happy life.
