Re: arrival - check out the number of planes arriving around the same time as yours on the same day a week before you arrive (discount domestic arrivals, of course). Just google for Denpassar airport. If there are lots of planes arriving at around that time then you might like to get a VIP service.
Yes, most restaurants are kid friendly - but do have a bag with pencils, paper, non-noisy games etc to keep the little one amused - service can be tardy.
I don't think white water rafting, a bike ride or a cooking class would be suitable for a 3 yo.
Be very careful to keep your child covered with insect repellant at ALL times. Be very careful to keep the child hydrated & use antiseptic hand wipes frequently.
