If you want to get 'hands on', then avoid the Casa Luna class. It's more demonstration than participation. I did it a few years ago and didn't get to touch a single thing until the end when we got to eat the final product. As for the demonstration part, well I really didn't get to see much of that either, since they cram so many into each class. Unless you push in early, everyone crowds around a tiny table, instead of standing back so everyone can see.

Basically, just a long wait for a meal, was all I got out of the day.
