I think you will find everyone has varying opinions on their favourite tailor, they may be their favourite but I bet they have had a few faults along the way....not always the tailors fault but in the interpretation of what needs to be done....from you to the tailor....from the tailor to the actual sewer....from the choice of style,material,quality and size.
Give Putu at Bali Brumby a try but as Heatherbelle suggests get one top done first. Although using different materials will give you various finishes to the tops regarding stretch and how the tops hang etc..
