I'm not sure how to translate what you need but thought I'd let you know that I ate at mostly western run restaurants as I could speak to the mostly Aussie owners and I did not encounter any issues. They checked all ingredients like pastes and sauces which is where a lot of hidden things are. They also ensured that all utensils and cooking appliances were cleaned thoroughly.
I know my issue is entirely different to yours but just thought I'd let you know what I do. I also carry my epipen, allergy tablets and anti bacterial wipes to make sure I'm not touching anything contaminated.
I have used 'Southern Cross Travel Ins' as well as they cover for pre-existing illness with a small additional charge, I've never had to make a claim though so not sure if they are helpful in this process.
