I have a food saver and have found that if the meat is frozen first before crovac'ing' it seals better and will then last unfrozen for at least 2 weeks. Otherwise your butcher should be able to provac the meat for you and the same at least 2 weeks. Of course you must keep refrigerated and be aware there is a possibility that the meat greys in colour but will still be perfectly safe to eat.
