Darwin Stop Over

We are flying from Adeliade to Denpasar via Darwin in April and have a 7 hour stop over in Darwin.

My question is, can we leave the airport during that time or do we have to stay there? I had assumed that we would be going through customs in Adelaide and therefore would be required to stay in the quarantined area of Darwin airport but my partner is sure that this is not the case.

Can anyone please shed some light on this for us.

Also, re: the arrival and departure taxes, can we use aussie dollars or do we need to have us currency?
