Accommodation is the problem cost wise unless you have somebody to stay with.
If you have small children or really want to take a look at Perth then a stopover would be the way I suppose. If however it is just adults or near adults maybe best to avoid the stopover.
However since AA is a point to point carrier if you miss your connection that is just your bad luck, no comeback. If you could time it so that you have a few hours in Perth you could get a taxi to the casino or city for a couple of hours. Leaving plenty of time means that if Tiger (for example) cancel or seriously delay your flight from Melbourne your whole holiday is not down the gurgler since you could get a later flight.
It would be a bit "touch-wood" for me I think but for the stopover night to be worthwhile you would need to want to see a bit of Perth or the savings against a direct flight would need to be enough to make it worth your while.
