i have cancelled and rebooked air asia flights with success but after many many phone calls and much stress. firstly phoning their call centre was the only way i was able to contact them to do this. after getting through to them, after many attempts over a period of weeks i then found it difficult to get anyone to understand exactly what i wanted/needed to do. it was very stressful! in your case after cancelling flights and arranging credit for another time i would be concerned that this may/may not happen as the message may not be clear to either air asia what has actually happened and how you go about using your credit-i hope this makes sense to you!!
would just be easier i think to rebook flights for your mum now and claim back from travel insurance.
