Been to Bali twice with my iPhone. As stated before if you're on a postpaid account your phone should be unlocked but double check with Telstra first, there shouldn't be a charge to unlock it.

I've used Simpati SIM's both times, you can get data enabled reasonably easily or alternatively there's plenty of free wi-fi around the tourist areas. Simpati has 3G but it's fairly patchy.
