I have travelled to Bali several times with the kids. The action highlights we have had have been:
White water rafting (we used Sobek as they are australian owned I think and have good safety), you can book the Ayung or Tala Waja?? river depending on they type of ride you want. The Tala Waja river has more ducking and some big drops.
Waterbom park - great day out for the kids
Elephant Park (Taro), elephant ride and up close experience and interesting museum. Just driving up to the elephant park will give you a good look at the rice paddies and amazing scenery.
Bird and reptile park are worth the visit.
Safari Park (havent been yet myself)
Horse riding at Tanah Lot
You will find loads of places selling tours of the above in stalls along the road - dont forget to barter as you can often get discount on printed prices.
Given what you have written Ubud sounds like a good location for your stay. As it isnt as touristy as some of the other spots but loads of places to eat and shop. Maybe break up your stay with some time in Ubud and another location - that way you get to see a bit more of the island and get different feels in each spot.
