If it was that critical they would get you to jump on the scales with all your baggage an calculate the exact weight. While distribution of cargo is critical, the larger the aircraft the wider the margins for error are.
All aircraft carry enough fuel to be able to divert or circle in an emergency. The fuel light is most definatly coming on as they approach their destination.
