the most famous is Ayam Taliwang or chicken with chilli sauce. There are a number of others like jackfruit curry and kankung from Lombok is famous in Indonesia (I think that is correct spelling but it is a water green that is usually tossed with some garlic and chilli). Lombok also means chilli so beware! There are a number of warung around Mataram that are well known but I can't remember the names. Probably the best bet is if out on a day tour with local driver to ask to go to a good Sasak restaurant that serves ayam taliwang etc and be specific in that you want Sasak food and not the usual Indonesian array. Luckily Sasak are Muslim therefore no dog and other funny things like blood clots though they don't mind a few bits of offal!
