If you're old enough to travel to Bali with mum, you won't have any issues buying drinks. I don't think I've ever seen anyone get carded in Bali.
Asking how much money to take is like asking how long is a piece of string. You can get by on $20 a day if you live cheap, but if you're planning on partying hard every night of the week you could easily spend $100 a day. If you've been before, you'd be a better judge of what you'd spend than I would.
Melasti Beach Resort is very much a family type hotel, not really suited to 5 guys looking to party big time. I'd be looking at something more in the Kuta area than Legian. You could probably find something cheaper and much closer to the types of bars you're looking for. Loads of schoolies type travellers stay at the Bounty, which is probably on par with Melasti for price, but has party events and lots of late night pool bar action. Also it's within staggering distance of a lot of bars you'd probably end up visiting.
