Mobile Phone

I have read a few different posts about mobile phones but can someone please clarify with me...........
Are you better off turning on your international roaming and using existing optus account or do you take over your mobile and buy a local sim card and make calls that way?
Will all mobile phones accept the local sim card?

Fly out Sept 16th and getting very excited! First time and cant wait.
