We went down to the fish markets in Jimbaran Bay in March and they were open.
I am pretty sure we found good knives at Centro and Carrefours.
Panorama Hotel, just past Tegal Sari, around the bend a little.
Tegal Sari has standard rooms for not much, also try Greenfields.
There are other hotels on opposite side of Jl Hanoman but I cant think of their names.
