probably not such a good plan.
I'd be inclined to do North coast stuff (Menganjan etc) from either Lovina or Pemuteran, and east coast stuff from say Candidasa or Amed, a bit like your first suggestion.
Rambutan Cottages in Lovina and Puri Wirata in Amed are two places that I could personally recommend.
Not so sure about the volcano thing, but I am sure others have done this.
