You can still purchase your duty free alchohol with ease at the airport in Oz before you board your plane. Just make sure you purchase it after you have gone through all the security check points and have got the the level where your boarding gate is. There are duty free shops on the level of your boarding gate so buy it there rather then before checkpoints, that way you will have no hassles and will not have to go to a collection point to pick up duty free.
When leaving Bali, in my opinion with all the new regulations now it's best to purchase when you disembark at home at your airport and buy on the ways out.
