...whatever you do, they will need lots of white rice, otherwise they won't feel satisfied. Sambal matah will be appreciated, but the best idea is NOT to cook Balinese food unless you really know how. If you are indeed good at Thai or Indian, that will be fine. The sambals will be needed in case they don't think it's spicy enough. Lastly, if they have not had so much social contact with Westerners, they will make you crazy every time you ask them if they want to have a drink and if so, what? They will almost always reply that they are "fine". Prepare coffee/tea (with lots of sugar) and just bring it to them. Plain water on the side. DON'T forget to say "please begin" (Silakan) otherwise they might just sit there and not touch anything. And for the rest...just keep smiling, I'm sure it will all be fine.
