I did the Casa Luna cooking class a couple of years ago and remember we were told to soak it in hot salty water for 24 hours, or something very similar to this, to cure the stone. I hope someone else replies about the curing process, cause my memory is a bit foggy on this one.
Hopefully then your garlic wont go grey!
