We generally use towels supplied by the hotel and have not stayed anywhere where they are not provided.
Maybe if you could post the name of the place/s where you intend to stay someone may be able to make an informed comment regarding the availability of towels there.
I do take a "tech towel" (I think that is the name of it) that I purchased in a store here in Australia for those times where we might be somewhere where a towel is not readily available; for instance where my children might want a quick dip while waiting for dinner where there is a pool on site. These take up very little room in the luggage.
Money - we always take mostly cash and have the plastics as a back up, or for larger purchases. Rules the same as anywhere - don't take you eyes off the card in any establishement.
Ask the other hotel guests for recommendations on money changers in the area. Each visit we have had money changers attempt to shorten us up in the transaction. I always find the experience a challenge.
If in doubt maybe use the hotel changer initially - you will more than likely get a lower rate but it may not be that much different in the scheme of things.
