Give it a go Kev, The Dutch are doing this all the time, I have seen numerous Dutch couples cycling around Indonesia. If you decide to do it, take the road from Kuta/Legian across to Candi Dasa. This is a relatively flat section. Call into Padang Bai and check out Blue Lagoon. After Candi Dasa you will encounter some very steep hills but also some beautiful scenery. You will find various places to stay along this stretch. There is then a long stretch of quieter road that is reasonably flat going all of the way to Singaraja and Lovina.From there the road is okay through to Gilimanuk. Many tourists who get taken "all around the island" never actually see these beautiful sections of Bali. Remember on most islands the mountains are in the central areas. Gilimanuk back to Kuta is VERY busy and VERY dangerous with numerous trucks and buses coming down that way from Java. Keep in mind that at any stage of this tour you can wave down a vehicle and throw your bike in the back. The heat,humidity plus the other vehicles will be more of a concern than the hills.
