If I was you I would speak to the boss and explain that you are thinking of going on an overseas holiday and need more than one week. Explain that you will consider leaving if you aren't able to take the leave. It's expensive to hire and train someone new, and there are never any guarantees that the new person will be any good. I also think they would find it difficult to hire someone with their one week at a time holiday leave policy anyway. Times are changing and there are less people looking for work.
If they wont let you have more than the one week leave. You'll find another job.
