If you see the person you hope to trust and they are cooking food, etc. They are probably the owner/worker and can be trusted.
Your main problem will be if you arrive early, warung might not be open yet, thus, no secure place to leave your stuff.
HINT: The newest and easiest motorbikes to rent in Bali are the completely automatic bikes (no need to shift gears with foot pedal). They are not only easy to use, they are the newer bikes, thus better condition, and they rent for close to same as the older, manual bikes.
But, the big plus is, they have a relatively large storage space beneath the seat.. It locks and would need to be pried open to steal. big enough for your valuables and cameras for sure, so I would recommend that for your early beach arrivals... just don't lose your key when surfing.
