credit card details by email to hotel???

I have made reservations with the bounty hotel by email, and they want my credit card number & passport details as confirmation...
I am a little bit suss about giving my credit card details by email - is this a commonly done thing? How do I know they wont charge stuff to it?
Can anyone do anything bad with my passport details if they get into the wrong hands?
