Hi, I've just got back from Bali and a few things you shouldn't miss are Ubud and the rice paddies and temples nearby and Amed or Permuteran for snorkelling and diving.
We hired a guide for 2 days in Ubud. He was excellent and very reasonably priced, if you need a guide or driver in Ubud or South Bali, I'd definitely recommend him (Nyoman Darna: darna_8@hotmail.com), really nice guy with a great sense of humour and very good english!!, took us to all the main temples, lake Batur and the beautiful rice plantations and hot springs. There are also a lot of good craft and art shops in Ubud for souvenirs.
In Amed a great hotel is Anda Amed resort, small hotel with brilliant service and food, nice pool, rooms with sea view. Ecodive was a very professional diving club we used while there.
If you go to Permuteran, the Taman Sari hotel is lovely, right on its own beach with excellent massage and spa. DON'T use the Argipelago diving club next to the hotel though, they were very rude, expensive and ignored all safety rules!!!
