We've been to Bali four times - one of those times, we got married there.
We live in Southern California and know what you are talking about with trash etc. Yes, there are typical third world problems in Bali but the culture is incredibly interesting and the people are wonderful.
For us, the reason to visit is the culture. The dance, the religion,
the fascinating agricultural practises, the art. Everyone in Bali
plays an instrument and has some artistic outlet. You will never have
a dull moment. I think it is one of those most interesting destinations in the world.
I would avoid Kuta because it's not what we look for in a vacation. Just a lot of shops, restaurants etc. However that may be what you are looking for - some do and they find the Kuta area very satisfying. There are bargains galore. I would however advise you to go to Ubud where you can go on some interesting walks, go bird watching, eat well and arrange for a wide variety of entertainment to keep all the members of your family happy.
It's a magical place. Good luck with your plans.
