If you eat at one of the restaurants on the beach front in Sanur, you can feel the cooling breeze.
I think in Sanur you can walk out your door and find restaurants and shops/stalls close by, but in Seminyak, much classier restaurants, in general, but far greater distance to buy the usual run of Bali items.
I am not a resort type holiday person, so prefer Sanur area.
I dont swim in either beach. The sand is swept each evening in Sanur for the table and chairs to be set up. Seminyak beach can almost disappear, depending on the time of the year (eg like a week ago) and the tides.
