If you wish to stay in the southern part of Bali and not too far a drive from the airport, then I would suggest either Sanur or Nusa Dua. However it depends on a number of factors, for example do you wish restaurants, some shopping, moey changer and somewhere to sit for a drink and watch the people walk by; then Sanur would be the choice. Nusa Dua is great, but you need a taxi to go anywhere from your hotel, as the examples suggested in Sanur. You can get a driver to take you for day trips from Sanur with ease. But if you wish very quiet lots of snorkling then Amed or Tulamben is you choice on the east coast, however these are isolated areas and not much else to do.
If you provide more information e.g. type of hotel, cost, if you like walking, easy access to restaurants, shopping etc then there will be plenty of people who will provide you with their opinions.
Do try Googling Sanur, Nusa Dua, Amed and you will find some intersting information. Also search this site for the same.
