I haven't dealt with this company but I'd just book the cruise once you got to Bali. How long are you staying for? Surely if you booked when you got there you could still go on the day you wanted. If not, Nusa Lembongan is such a lovely island, why not just get the Scoot boat from Sanur and go for the day, and do some exploring on your own. As soon as you get off the Scoot boat there'll be locals willing to fix you up with snorkelling gear (see Nicky if you can), motor bikes, and suggestions on places to eat and see the village. It's a great place.
