Cooking knives...

Does anyone know if we are allowed to take cooking knives in check-in luggage? If so, do we need to declare it or something? Or should I just avoid the whole thing?

Also, if it is possible, I am assuming it is possible to buy good cooking knives over there - does anyone know any good places to look?
