Rice done like that is called Ketupat - and traditionally it is cooked in banana leaf. Have a look on any of the indonesian or malaysian recipe sites under ketupat and you should have no trouble finding it.
The syrup that comes with the iced tea is a type of sugar syrup - I remember reading about it on the forum and someone advised the type of sugar to use to make the syrup (possibly palm sugar or jaggery) - try a 'iced tea' search of the archives and you should find it. From memory it was sometime in the past 4-6 weeks.
