I am afraid Schatzi's experience is the norm at Casa Luna's cooking school. One gets to do hardly anything except watch the cook and assistants. All the ingredients are already prepared before the school starts.
If you want hands-on experience, attend the Bumbu Bali Cooking School in Tanjung Benoa. The joke there was that it seemed the "students," under the direction of Chef Heinz von Holzen and his assistants were preparing the day's food for his restaurant which goes by the same name. Chef Heinz agreed that the amount and all teh different kinds of bumbu we prepared, plus some of the dishes, were exactly for that purpose. The number of "students" is always limited to 12 persons.
