Sugar syrup ?

Our son has gone crazy on iced tea after drinking it heaps in Bali the past couple of trips.He's a boy that really enjoys spending time in the kitchen & hopes to be a chef one day.
He's going on at me about sugar syrup NOT being what I think it is - basically a mixture of boiled sugar & water.He says the mixture just does not taste quite right in the iced tea.

I was wondeing if I got one of those solid blocks of palm sugar from the Asian grocery store & boiled that down - do you think it would be more authentic ? has anyone got any ideas what type of sugar they use to make sugar syrup in Bali ? He just keeps telling me all cafes & bars had it in different types of bottles.I expect probably made up before & pored into those bottles.

We're into many different types of herbal teas so that's not a problem he just says normal sugar doesn't have the right taste.I have even looked at web sites that has bartenders tips on such as cooking the solution of sugar & water over low heat until clear & then boiling it for a minute BUT according to our son it is still not right !
Has anyone got any idea before tour budding chef drives me crazy !!!
