About 75% of the capsicain (the heat) resides in the membranes which hold the seeds and the seeds get the reputation from this.
The amount of Capsicain is measured in Units Scoville; e.g. the Bird's Eye, first cousin to Rawit of Indonesia, has about 10,000 units, Jalapenos green about 4,500 red 5,500 and so it goes on.
However, the Guinness Book of records lists the Habanero Red at 450,000 units and the Yellow at 350,000 and this yellow one we have in our garden, just to give a shock to the big-heads who say they'll eat the hottest. Just one of the Yellow Habanero, blended with a 600ml bottle of Italian Passato, Spag type sauce, gives a Sambal far too hot for most aficionados.
We grade our Sambals on the Wrecked 'em scale. We gave some to neighbours, friends before then (!) and it bleddy-well Wrecked 'em, so the name has stuck, so to speak.
