I doubt you would be paying "official" duty. You would be asked to accompany the customs officer into the office and he would ask you for money which would go in his pocket. If you are serious about taking a dozen bottles, declare it but make sure you only have a small amount of cash in your wallet ie one A$20 note or two A$10s. If he asks for more say you have nothing until you get to a bank. I'm sure he'll be more than happy with A$20 and if he's not, offer him a bottle or two to go with it.
